Snow Covered Stained Glass Window Cookie

What are you doing this last weekend before Christmas!? If you have time, try this easy, no-bake, Snow Covered Stained Glass Window cookie, which has become a family favorite!

Ingredients:

12 oz. semi-sweet chocolate chips

1 stick butter

10 oz colored mini marshmallows

1 cup finely chopped walnuts

1 tsp vanilla extract

14 oz. shredded coconut, divided in half

 

  • Melt butter over medium-low heat. Then add chocolate chips, stirring constantly until melted, then add vanilla. Transfer to another dish to help cool for approximately 5-10 minutes.
  • Lay saran wrap over 2 baking sheets. Spread out half the shredded coconut to cover the baking sheet. Repeat with the remaining coconut on the other baking sheet.
  • Mix all other ingredients in a large bowl. Dividing mixture in half, use ice cream scooper and scoop out mixture into the shape of a log down the middle of each baking sheet.
  • Sprinkle extra coconut over the tops and sides of the logs. Fold up saran wrap from both sides and tightly wrap the logs to secure mixture, twisting off ends and tucking under the logs.
  • Refrigerate until firm, about one hour. Slice with bread knife.
